Established in 2022, Comiskey Distillery was opened by the Comiskey family on-site at their venue Eatons Hill Hotel.
Dirty hands, make a smooth spirit. Forged from a dedication to hard work, the Comiskey family are not afraid to get the job done. With over 50 years working in construction and a collection of iconic venues under their tool belt, founders Paul Comiskey and sons David and Robert are toasting to their first drink. Soon to distill their very own gin, vodka, rum, and signature spirit “Comiskey Whiskey”.
GIN WORKSHOPS AVAILABLE, BOOK HERE
Comiskey Distillery’s Gin Workshop is an intimate distilling experience. Craft your very own 500mL bottle of gin from a mini traditional Alembic copper still, with over 100 botanicals to choose from. As an Apprentice Gin Maker, you’ll be guided by our expert Craft Smiths throughout the process. Learn how to taste spirits like a true professional, you’ll receive a lesson in Spirit Yoga and be able to pair the perfect tonic with your gin blend. The ultimate hands-on class complimented with two cocktails and a gourmet charcuterie board to enjoy an afternoon of experimentation, learning all things gin making.

- X2 workshop cocktails, learn how to taste spirits like a professional with a lesson in spirit yoga
- Shared gourmet charcuterie board, a spread of local vintage cheeses, cured meats, dried fruits and more

- A selection of 100+ botanicals to choose from, both classic and exotic
- Workshop space and use of mini copper pot still per person
- Label, sign and wax seal your own bottle with individual tasting notes

Due to high demand from Gin Workshop attendees, you can now buy the Comiskey Distillery’s flavoured gins! Hand-crafted by the distillery’s Flavoursmiths are four bespoke gins each with an individual flavour profile consisting of a hero – Fruity, Herbal, Citrus & Floral.
Previously only tasted by workshop attendees to enjoy whilst creating their own blend, you can now purchase one or all of these gins at Harry Brown bottle shop, next door to the distillery.

Due to high demand from Workshop attendees, you can now buy the Comiskey Distillery’s Dehydrated Fruit cocktail garnishes!
Choose from dehydrated Orange, Grapefruit, Lemon or Lime to give your cocktail that finishing touch.

Our iconic pasabahce glasses are used in our Gin and vodka workshops and due to the overwhelming demand from attendees they are now available to purchase in Harry Brown Bottleshop. Located in the middle of the store or in the Gin aisle. Pick up one glass or a whole box.

HARRY BROWN BOTTLE SHOP

You’ve never seen a bottle shop like this before. Recently undergoing a major renovation, the new award-winning Harry Brown bottle shop at Eatons Hill Hotel features a European marketplace inspired design, with 300 authentic wine barrels, antique trucks, exposed brick, a copper display still and more. Attached to Comiskey Distillery, customers can peer in through the connecting glass doors and see the distillery’s 1,000 litre working still in all its glory while they’re grabbing their favourite drink.
